We partner with a local processor that also has a long family history in the business that is an incredible resource.  We offer our All Natural Beef in 4 quantities: Whole, Half, Quarter and Split Quarter (1/8th).

CUTS EXPLAINED

We have listed below an example of the various cuts available when ordering. If you don't see something, just ask, and we will be happy to do our best to customize your order.


On a 1,000 lb. cow these are estimated number of cuts per Quarter:

2     -   Chuck roasts

5     -   Round steaks OR 8 cutlets

1     -   Arm Roast

1/2 - Rump Roast

1/2 - Pikes Peak Roast

5-6  - One inch rib eyes(thickness)

4      - One inch T-bones

4      - Sirloins

1/2  - Brisket (there are 2 briskets per cow)

Remainder is Hamburger packaged in 1/lb. or 2/lb packs


These are standard cuts, some deviation is fine. You can go all hamburger if desired. Whole orders can choose as they wish, Quarter orders are limited (sharing is caring)!


Soup bones and other bones also packaged if desired.

PRICING

$8.00/lb based on hanging weight

A half is roughly $1,760 ($8/lb @ 220 lbs), depending on weight. This is how butchers charge and is traditional method. Weight varies on take home weight depending on the cow, however these are all lean All Natural Cattle so we don't lose as much in the trim stage.


Just prior to processing half the payment is due, and then once we hear from the processor the hanging weight we will send the balance over. As you know, all cuts are priced differently per lb at the store and we average it out per industry standard (i.e. hamburger meat is cheaper than steaks/roasts)

If you would like bones, we can do that, no additional cost!
