Whole Beef – Nose to Tail Goodness
Enjoy the true farm-to-table experience with a whole beef, processed with care and packaged for your family’s table. Nothing goes to waste—you’ll receive a wide variety of wholesome cuts, from tender steaks to hearty roasts, rich bones, and specialty items that celebrate the entire animal.
What to expect:
On average, your beef will yield about half ground, a third roasts, and the remainder steaks. We use a predetermined cut sheet designed to maximize both quality and value, giving you the best variety of cuts for your investment.
Example of Cuts included:
Specialty Cuts: Marrow bones, ox tail, heart, liver, cheek meat, tongue
Steaks: Chuck, ribeye, filet, New York strip, sirloin, flank, flat iron, tri tip, tender tips, inside skirt, outside skirt
Slow-Cook Favorites: Chuck Roast, osso bucco, hanging tender, short ribs, flanken ribs
Roasting Cuts: Two full briskets
Ground Beef (90/10): Remainder is carefully ground and packaged in convenient one-pound portions (other options available upon request)
